Pineapple Teriyaki Chicken Meatballs With Spaghetti Squash Noodles

Just wanted to share an easy delicious recipe 🙂

  • Pineapple teriyaki chicken meatballs from Costco
  • 1 whole spaghetti squash
  • 2 Dorot crushed garlic cubes
  • 1 Dorot crushed cilantro cubes (optional)

 These Dorot cubes are awesome by the way! They save me so much time in the kitchen since I use them for nearly everything I cook. Preservative free & only about $2 each package. It is available as crushed garlic, ginger, cilantro, basil, parsley, onions, red chiliDorot

  • 1 tbsp Kerrigold butter
  • grated parmesean cheese
  • black pepper / chopped green onions / chopped cilantro (optional)

Spaghetti Squash Noodles

Wash & microwave the whole spaghetti squash for 2 minutes 45 seconds. This makes it just soft enough to cut easily. Cut the woody ends off. Slice the squash straight down the middle (the long way). Place face down on a baking sheet & bake at 375 degrees for about 40-45 minutes. While it is cooking, add the butter, Dorot crushed garlic, & cilantro cubes to a mixing bowl. Allow the frozen cubes to soften to room temperature.

Remove spaghetti squash from oven & use a fork to remove all the squash shreds from the skin. Discard the skin & place all the shreds into the mixing bowl. Mix spaghetti squash noodles to flavor them with the butter/crushed garlic/crushed cilantro.

A small spaghetti squash makes about 2 servings.

Pineapple Teriyaki Chicken Meatballs

These meatballs come from Costco precooked & refrigerated. I usually place them directly into the freezer & remove them as I prepare a meal. You can microwave, bake, or pan fry them. I like to defrost & warm them up in the microwave then brown the outside on a skillet. Whichever method you choose, they still taste great!

Putting it together

Now just place the meatballs on a bed of spaghetti squash noodles, sprinkle some black pepper/parmesean onto the noodles, garnish with some cilantro/green onions & enjoy!
